Sourced from small coffee producers located in the Gedeo Zone of the Yirgacheffe district. The Gedeo zone is named after the Gedea people who are indigenous to this area. The coffee cherries are delivered to the mill and dried for approx 12-15 days. In the daytime, the cherries need to be raked continuously in order to ensure a consistent drying process. They are covered in the daytime between 12pm to 3pm in order to protect them from the hot sun and also at night time to protect from the rain.
